You Can Pickpocket Fusion Cores

If you sneak up on an enemy wearing power armor, you can actually pickpocket the fusion core from their power armor. 

This will add a fusion core to your inventory but it will also make their armor less effective. Enemies wearing Power Armor can prove to be difficult foes but once you take their source of power away, you'll have a much easier time taking them, and anyone with them, down. 

If you plan to do this, you might want to think about investing some points in the Sneak perk. It's part of the Agility tree.
