We mentioned this in the video too, but screen pinning is an excellent feature you'll want to use. Essentially allowing you to PIN one screen to the device, so a user can't go elsewhere. Loaning the phone to someone to make a call, pin the dialer to the screen so they can't mess with your phone or look through photos and text messages. The same works for games, apps, and many other things. It's extremely powerful, and can be done by heading to settings > security > and scrolling down to enable "Screen Pinning"

These are all lollipop features. This article is poorly titled, there are no nexus 6 specific features. Just lollipop features.
