Remember, you should be able to downgrade from iOS 9 to iOS 8.4.1. Assuming Apple doesn't change anything up, it will sign off on the iOS 8.4.1 update for a few days after the iOS 9 release date. This will leave a downgrade loophole open and that will give you a way to get iOS 9 off your iPhone 5s. Look into the process now so that you're prepared.
