If you move to iOS 9.3.6 and you run into trouble, you can drop back to iOS 9.3.5. 

Apple's is currently signing on the iOS 9.3.5 which means you can take advantage of a loophole and drop back down if you decide you hate iOS 9.3.6's performance.

The company isn't signing on older versions of iOS 9 or iOS 8 so there's no way back to any of the older versions of iOS.
