Not only does Evernote support the iPad Pros larger resolution, but the app also supports Apple's new Pencil stylus, so you can write or draw notes right in Evernote and take advantage of the Pencil stylus at the same time.
Evernote also supports Split View multitasking, so you can have your notes open on one side of your iPad and another app open on the other side, letting you do research and jot down notes at the same time without having to switch back and forth between the two apps.
