If you can't stand iOS 13.7's performance on your iPhone 6s or iPhone 6s Plus, downgrading isn't an option anymore.
Apple has stopped signing on iOS 13.6.1 which means you can't use a loophole to drop your phone back to the previous version of iOS 13 in an effort to improve performance.
If you really want to move your iPhone 6s or iPhone 6s Plus off of iOS 13.7, you can try moving it to Apple's iOS 14 beta.
