Here are a couple of mods that restore some of Bethesda's content that failed to make it into the current version of the game. 

Skyrim Restored for PS4 and Cutting Room Floor for Xbox One both deliver extra worthwhile content to Skyrim Special Edition. Cutting Room Floor is the more substantial of the two but PS4 owners won't be disappointed. 

Skyrim Restored includes some lost NPCs and a few locations that aren't available in the vanilla version. Here are the new locations:

• Windhelm Pit Arena
• Cidhna Mine
• Hoarfrost Grotto Cave
• Pelagius Tower

And here are the new NPCs:

• Benkum (Windhelm)
• Brond (Windhelm)
• Captain Metilius (Solitude)
• Edorfin (Windhelm)
• Grushnag (Caravans)

As for Cutting Room Floor, it includes a massive list of unimplemented quests, NPCs, items, and more. It's a hefty amount of content and it's a perfect addition for those of you that have exhausted the game's map, quests and characters.
