The iPad keyboard now makes it easier to enter punctuation and other characters on the iPad. 

Instead of tapping Shift and going back to the key, you can simply drag down on a key to enter the character that appears on the key in light gray. 

This takes a little getting used to, and isn't super intuitive at first -- but after a lengthy email or two it will become second nature.
