Standard Xbox controllers don't offer any profiles, and the original Elite Controller only offers 2, but with the Elite Series 2 controller you get three profiles. 

A profile allows you to change what each button does, and what each paddle does. You can keep three on the controller at all times for easy switching. You can also store others in the Xbox Accessories app to rotate in later. 

I typically keep a profile for PUBG, Call of Duty: Modern Warfare and then one for other games I am playing like Madden 20 or for a racing game. You can also use the third as a default profile when trying out a new game.
