Both phones run Android 7.0 Nougat and will quickly get updates to Android 8.0 Oreo soon. Both are fast, and both use the latest and greatest hardware. Speed and performance won't be an issue on either the Note 8 or the S8+. 

The only big change in terms of performance is 6GB of RAM on the Galaxy Note 8. It's probably overkill, but you can expect apps and games to run better on Samsung's new phone. 

More importantly though, is battery life. The Galaxy Note 8 has a bigger screen and more going on with the software, yet has a smaller 3,300 mAh battery. Because it had to share space with the S-Pen. 

The slightly smaller Galaxy S8+ has a bigger 3,500 mAh battery and will likely last a little longer each day. If battery life is more important than two cameras, buy the Galaxy S8+ and enjoy it.
