 If you want the Stainless Steel Apple Watch, the Hermes, the Nike+ or the Apple Watch Edition you will need to buy the Apple Watch 3. 

Apple no longer sells these in the Apple Watch series 2 model and there is no way to get these other finishes and options on the Series 1 that Apple Sells. 

In many of these instances you will need to choose the Apple Watch 3 with LTE, since there is no Hermes or Appel Watch Edition without LTE. The LTE models also get a Ceramic Black finish for the Edition.

Basically, if you want the super special versions of the Apple Watch you need to buy the newest, and pay a premium.
