If you want a foldable display you'll have to go with Samsung's Galaxy "F" the new foldable phone it recently confirmed in San Francisco. The Galaxy S10 most likely won't have a foldable option. 

Galaxy S10 rumors point to an Infinity display with a screen-to-body ratio of 93%. Another report from Korean site The Bell claims Samsung will go with 5.8-inch and 6.3-inch Infinity Displays. A more recent report claims these will indeed be the Galaxy S10's display sizes.

Leakster Ice Universe claims Samsung will make additional tweaks to the Galaxy S' display including an upgrade to the pixel-per-inch (PPI) count to 600+ (4K/UHD).

The Galaxy S9 and Galaxy S9+ displays come with 570 and 530 PPI, respectively. He also claims Samsung will use Infinity-O displays on the Galaxy S10.

Here's how the screen sizes could breakdown: 

  • Galaxy S10e: 5.8-inches 18.5:9 2K+ Super AMOLED
  • Galaxy S10: 6.1-inches 19:9 2K+ Super AMOLED
  • Galaxy S10+: 6.4-inches 19:9 2K+ Super AMOLED
  • Galaxy S10 X: 6.7-inches w/ 5G Support

Bottom line, if you want a foldable display on your next phone you're waiting for the Galaxy "F", not the Galaxy S10.
