If you want to gain experience faster, you'll want to stack quests. If you're new to open-world RPGs, all this means is that you'll want to gather as many quests as you can for one area before setting out.

This might require some time or a quick look a guide for some extra help but the extra time you spend gathering quests up will pay dividends. You won't waste time looking for things to do and you won't have to travel great distances to get a bunch of stuff done.
